The first point: this is pungent brown mustard, not Canadian yellow
Indian mustard seed is principally Brassica juncea — brown or black seed carrying substantial pungency. Canadian yellow mustard is Sinapis alba and is markedly milder. Canada leads world mustard seed exports by value; India is a different product in the same customs heading.
The consequence is practical: these are not one-for-one substitutes. Pungency, colour and end use all differ. If your formulation was built on yellow mustard, swapping to Indian brown changes the heat profile and the finished colour. Name the species and the pungency requirement in the contract, and match against a retained sample before committing to volume. This page covers the seed; the meal left after crushing is a separate purchase with its own specification.
Pungency is the real specification
The commercial value of brown and black mustard sits in its pungency, which comes from allyl isothiocyanate. The words “mustard seed” on a proforma invoice do not control that at all.
Specify a minimum allyl isothiocyanate or volatile oil content, with the analytical method stated and the test date required. Age, heat and poor packaging all reduce pungency — and that loss appears nowhere else on a certificate of analysis. A lot can meet purity, moisture, ash and colour and still underdeliver in a condiment. If you are making a table mustard or a paste, this single clause is the one that protects the product.
Mustard is a declared allergen
Mustard requires mandatory allergen declaration in the European Union and several other markets. As with celery, the consequence reaches well beyond your own label.
A grinding or packing line that handles mustard can transfer mustard allergen to every other spice that runs on it. So two questions, both before price: how is mustard segregated in the supplier’s facility — dedicated line, dedicated equipment, validated cleaning? And, if you also buy other spices from the same source, is mustard handled in that facility at all? Require a written allergen management statement covering segregation and cleaning validation, and cross-contact declarations on your other products from the same plant.
Seed type, size and colour
Brown, black and small-seeded types are separate products with separate prices and applications. Specify seed size on a sieve basis with a tolerance, and colour against a retained sealed reference sample, with a maximum percentage of admixture as its own line. “Bold” is not a specification.
Cleaning: a small seed
Mustard is a small seed, so screening alone cannot separate soil particles or weed seeds of similar diameter. Specify total ash and acid insoluble ash as separate contract lines — acid insoluble ash is the soil and sand indicator — and ask which cleaning steps are on the line and in what order: destoning, gravity separation and optical sorting rather than screening alone. Add separate limits for foreign matter, other seeds, weed seeds and damaged or discoloured seed.
If you are buying for crushing
Specify oil content with its basis and method. And note that Indian mustard is a high erucic acid type: some markets set maximum levels for erucic acid in vegetable oils and in foods containing them.
If the seed is destined for oil, confirm the erucic acid position for your market with your own regulatory adviser before contracting. For spice and condiment use the question generally does not arise in the same way, but it is better raised at enquiry than discovered at labelling.
Sterilisation and residues
For EU-bound spice-grade cargo: ethylene oxide is not approved for food use in the European Union, where the residue limit expressed as the sum of ethylene oxide and 2-chloroethanol is 0.05 mg/kg under Regulation (EC) No 396/2005. Steam is the route for EU shipments — and because steam affects volatile content, require the pungency figure to state whether it is pre- or post-treatment.
Specify the full pesticide residue panel against your destination list, aflatoxin with the sampling plan named, heavy metals to destination limits, and for ground or ready-to-use forms the microbiological panel including Salmonella in 25 g.

Origin and season
Indian mustard comes principally from Rajasthan, which supplies around 40 percent, with Uttar Pradesh, Madhya Pradesh, West Bengal, Haryana and Gujarat also producing. It is a rabi crop, sown in October and November and harvested from February into March, so supply is deepest and pricing most competitive in the first and second quarters. Indian export prices in 2024 ranged roughly between US$0.83 and US$2.66 per kg depending on type and grade.

How to qualify an Indian mustard supplier
- Name the species, type and size, and state the application before price.
- Ask for a pungency figure on a recent lot with the method and test date.
- Ask how mustard is segregated, and whether other spices run on the same line.
- Ask for acid insoluble ash as a separate figure and the cleaning line in order.
- Request a sealed retained sample and agree colour and size against it.
- For crushing, confirm oil content and the erucic acid position for your market.
- For EU cargo, confirm steam sterilisation and whether the pungency figure is pre- or post-treatment.
Frequently asked questions
- Can it substitute for yellow mustard?
- Not one for one. Indian mustard is Brassica juncea, brown or black and pungent; Canadian yellow is Sinapis alba and milder. Name the species and pungency in the contract.
- How is pungency specified?
- Minimum allyl isothiocyanate or volatile oil, with method, test date and a pre- or post-treatment basis. Age and heat reduce it and that loss shows nowhere else.
- Is mustard an allergen?
- Yes, declared in the EU and other markets. A shared line can transfer mustard allergen to other spices, so require an allergen management statement and cross-contact declarations.
- Does erucic acid matter?
- For seed destined for oil, yes — Indian mustard is a high erucic type and some markets set maximum levels in oils and foods. Confirm your market’s position.
- Why two ash figures?
- Total ash includes soil silica and does not show how clean a lot is. Acid insoluble ash is the soil indicator.
- How much loads into a container?
- Around 25 to 26 MT in a 20-foot container; weight limited.
