Makhana, or fox nut, is the popped seed of the prickly water lily Euryale ferox. Light, crunchy and naturally gluten-free, it has become one of Indiaโs fastest-growing superfood exports as a roasted snack and healthy alternative to chips. Nearly all of the worldโs makhana comes from the Mithila region of north Bihar, which holds a GI tag for Mithila Makhana.
