Indian Celery Seed: Allergen Control, Volatile Oil and Specification
India supplies roughly three-quarters of world celery seed exports — a concentration matched by few commodities. The United States is by far the largest buyer, with Canada and South Africa taking the trade to around 63 percent between the three, and Indonesia, the UK, the Netherlands, Australia and France following. What a seasoning manufacturer, celery salt producer, spice blender or extraction house should settle before contracting.

The allergen question comes first

Celery is unusual among spices in one decisive respect: it is a declared allergen. It appears on the European Union’s list of substances requiring mandatory declaration under the food information regulation, and carries allergen labelling obligations in a number of other markets.

That has an implication most buyers underestimate, and it is not about the label on your own pack:

A grinding or packing line that handles celery seed can transfer celery allergen to every other spice that runs on it. So two questions follow, and both should be asked before price. First: how is celery segregated in the supplier’s facility — dedicated line, dedicated equipment, validated cleaning between runs, or none of these? Second, and the one almost nobody asks: if you buy other spices from the same supplier, is celery handled in that facility at all? A cumin or coriander lot from a plant that grinds celery may need a cross-contact statement you were not expecting.

Require a written allergen management statement covering segregation and cleaning validation, and require celery cross-contact declarations on your other products from the same source. For your own celery seed, confirm the labelling obligation in each destination market with your regulatory adviser — the requirement is not identical everywhere.

Volatile oil: the aroma is the product

Celery seed is bought for its aroma. That aroma sits in the volatile oil, and within the oil the phthalides give celery its characteristic, immediately recognisable note.

Volatile oil declines with age, with heat, with grinding, and with steam sterilisation. A bare percentage on a datasheet therefore tells you very little.

Specify a minimum volatile oil content with the test date, and require a declaration of whether the figure is pre- or post-sterilisation. For a seasoning blend, a celery salt or a ready-to-use product, that single clause decides whether the finished product smells like the sample you approved. Agree aroma against a retained sealed reference sample as well as the number — the two together are enforceable in a way neither is alone.

Ground celery seed loses it faster

Grinding exposes surface area and volatile oil falls away quickly afterwards. If you are buying ground, specify mesh, the grinding date, and barrier packaging — and plan stock turn accordingly rather than treating it like whole seed.

Ash: specify the pair

Celery seed is very small, and soil is the characteristic contaminant. Total ash alone will not tell you how well a lot was cleaned, because it includes soil silica — and a dirtier lot can show a higher figure.

Specify total ash and acid insoluble ash as separate contract lines; acid insoluble ash is the soil and sand indicator. Then ask which cleaning steps are actually on the line. With a seed this small, screening cannot separate grit of the same diameter — cleaning depends on destoning, gravity separation and optical sorting, and asking which of those the supplier runs tells you more than any adjective.

Sterilisation and residues

For EU-bound cargo the rule is the familiar one: ethylene oxide is not approved for food use in the European Union, where the residue limit expressed as the sum of ethylene oxide and 2-chloroethanol is 0.05 mg/kg under Regulation (EC) No 396/2005. Steam is the route for EU shipments — and steam reduces volatile oil, which is precisely why the pre- or post-sterilisation declaration above matters.

Specify the full pesticide residue panel against your destination list, aflatoxin with the sampling plan named, heavy metals to destination limits, and for ground or ready-to-use forms the microbiological panel including Salmonella in 25 g.

Say at enquiry whether you want food-grade spice seed or seed for sowing. They are not interchangeable, and the classification differs. Agree the customs heading with your broker before the first shipment rather than after — celery seed is one of the products where practice is not uniform.

Origin and season

Indian celery seed comes chiefly from Punjab, Uttar Pradesh, Madhya Pradesh, Rajasthan and Gujarat. It is a rabi crop, sown in the post-monsoon months and harvested in the first quarter, so new-crop material — at its best for volatile oil and colour — becomes available early in the year. For an annual requirement, contracting in or near that window gets you better aroma and better availability.

How to qualify an Indian celery seed supplier

  1. Ask how celery is segregated in the facility, before anything else.
  2. If you buy other spices from the same supplier, ask whether celery is handled there and request cross-contact declarations.
  3. Ask for volatile oil on a recent lot, with the test date and the pre- or post-sterilisation position.
  4. Ask for total ash and acid insoluble ash as two separate figures.
  5. Ask which cleaning steps are on the line, in order.
  6. For EU cargo, confirm steam sterilisation with validation data and the post-steam volatile oil.
  7. Request a sealed retained sample and agree aroma and colour against it.
