Declare the intended use: sprouting seed is a different regulatory product

This is the most important section on the page, and it is specific to fenugreek in a way that applies to almost no other spice.

Fenugreek seed used for sprouting was implicated in a major European foodborne outbreak, after which the EU introduced specific requirements covering seeds destined for sprout production — microbiological testing, traceability through the chain, and certification obligations on consignments. Sprouted seeds are eaten raw or lightly cooked, so any contamination present on the seed can multiply during germination rather than being destroyed.

The practical rule: declare the intended use at enquiry. If your seed is going into sprouting, it is not a spice purchase with a spice specification — it carries its own microbiological testing regime, its own documentation and its own traceability expectations. Specify the testing your market requires, require results on the shipped lot, and confirm the current requirements with your own regulatory adviser rather than relying on a supplier’s assurance or on a page like this one. Buying sprouting seed on an ordinary spice specification is a serious compliance gap, and it is the single most common way this product goes wrong.

Fenugreek is a raw material for steroidal saponins, for 4-hydroxyisoleucine used in blood-sugar supplement formulations, and for galactomannan gum. An extraction buyer needs the assay stated with its method; a seed lot that performs perfectly as a culinary spice may not meet an extraction yield requirement, and the two are priced differently. Say which stream you are in before asking for a price — it changes both the specification and the number.

Ash: specify the pair

Fenugreek is a small seed, often threshed and dried on open ground, which makes soil the characteristic contaminant. Total ash alone will not tell you how well a lot was cleaned, because it includes soil silica.

Specify total ash and acid insoluble ash as separate contract lines — acid insoluble ash is the soil and sand indicator. Then ask which cleaning steps are actually on the line: destoning, gravity separation and optical sorting, rather than screening alone. As with other small seeds, that question tells you more than any adjective on a datasheet.

Sterilisation and residues

For EU-bound spice-grade cargo the rule is the familiar one: ethylene oxide is not approved for food use in the European Union, where the residue limit expressed as the sum of ethylene oxide and 2-chloroethanol is 0.05 mg/kg under Regulation (EC) No 396/2005. Steam is the route for EU shipments. Specify the sterilisation method, require validation data for steam, and confirm what your destination accepts before contracting.

Specify the full pesticide residue panel against your destination list, plus aflatoxin with the sampling plan named and heavy metals to destination limits. For a ground or ready-to-use product, add the microbiological panel including Salmonella in 25 g.

Kasuri methi: colour is the price, and added colour is the screen

Dried fenugreek leaf is bought on appearance and aroma. Good material retains a green colour and a high leaf-to-stem ratio; poor material is dull, stemmy and weak in aroma.

That creates the same temptation seen in other green-graded products: dull leaf brightened with added colouring matter. Require freedom from added colouring matter as a standing contract condition tested on every shipped lot, not once at approval. Natural dried leaf is not perfectly uniform in shade — vivid, perfectly even green at a low price is a test result waiting to happen, not a bargain.

Also specify leaf-to-stem ratio, moisture, foreign matter, and colour against a retained sealed reference sample with the crop year stated. And remember the freight point: kasuri methi is extremely light, so compare landed cost rather than FOB price and discuss carton format and compaction before negotiating.

Origin and season

Rajasthan supplies over 80 percent of India’s fenugreek, with Gujarat and Madhya Pradesh also significant. It is a rabi crop, sown from October and November and harvested from February into March, so new-crop material becomes available in the first quarter and colour is at its best then. For an annual requirement, contracting in or near the new-crop window gets you better colour and better availability.
