Viscosity is the product — and a bare number is not a specification
Guar gum is bought for what it does to a liquid. Viscosity is therefore the parameter, and it is quoted in centipoise (cPs). But a cPs figure on its own is close to meaningless, because the same powder returns different numbers depending on how it was measured.
A viscosity specification needs six things:

Two offers quoting the same cPs on different methods are not comparable, and this is the single most common reason a guar gum purchase disappoints. Put all six elements into the contract alongside the number, and ask for the supplier’s own method statement. A supplier who quotes viscosity without stating hydration time and rpm is either not testing carefully or not expecting you to check.
Mesh controls hydration rate
Particle size is the second half of the performance question. A finer powder presents more surface area and hydrates faster; coarser material hydrates more slowly but disperses with less lumping.
That distinction is decisive in some applications and irrelevant in others. In a fracturing operation or a continuous process, the gum must build viscosity in minutes and a fast-hydrating fine grade is essential. In a batch food process where the system can stand overnight, a standard grade is fine and the premium buys nothing.
Specify mesh alongside viscosity — 200 mesh is the common reference, with finer and coarser grades available — and tell the supplier what your process time window actually is.
Ethylene oxide: the compliance issue specific to this product
This is the section that matters most for any EU-bound consignment, and it is specific to guar gum in a way that few other ingredients are.
Ethylene oxide residues in guar gum from India triggered extensive product recalls across the European Union, and the EU responded with intensified import controls requiring analytical reports and official certification for consignments of Indian guar gum. Ethylene oxide is not approved for food use in the EU, where the residue limit expressed as the sum of ethylene oxide and 2-chloroethanol is 0.05 mg/kg under Regulation (EC) No 396/2005.
Three things follow. Require the ethylene oxide and 2-chloroethanol result on the shipped lot, from a named laboratory, with the limit of quantification stated — a pass statement without an LOQ tells you nothing. Confirm the current EU control requirements for Indian guar gum with your own regulatory adviser at the point of contracting, since the control position is reviewed periodically and secondary sources, this page included, go out of date. And ask the supplier directly what their sterilisation and fumigation practice is across the whole chain, not just at the final stage.
Food grade: E412 and purity criteria
Guar gum is an authorised food additive, E412 in the European Union and INS 412 internationally. Food grade material must meet the applicable purity criteria — the EU specification for food additives, and JECFA or Food Chemicals Codex requirements depending on your market.
Specify which standard applies rather than accepting “food grade” as a description, and require the certificate of analysis to report against that standard’s parameters, typically including galactomannan content, acid insoluble matter, protein, ash, moisture, heavy metals and microbiology.

Derivatives are a different trade from native guar gum, with different specifications and different pricing. If you need a modified guar, say so explicitly rather than describing it as a guar gum requirement.

Why the price moves
Guar gum pricing behaves unlike most food ingredients, and buyers who plan around it do better than buyers who are surprised by it.
A large share of world demand comes from hydraulic fracturing in the United States, where guar is used as a gelling agent. That demand tracks drilling activity, not food consumption. Meanwhile guar is a single annual rain-fed kharif crop concentrated in one region of India, so a weak monsoon and a strong drilling season can coincide. The 2012 price spike remains the reference point in the trade.
For anything beyond a single container, agree a price mechanism and review points in the contract rather than assuming a stable market — and ask your supplier what their raw material position looks like, because a seller quoting a firm annual price without holding stock or cover is taking a risk that will eventually become your delivery problem.
Origin and season
Rajasthan is the dominant guar-producing state, with Gujarat, Haryana and Punjab also significant, and further cultivation in Uttar Pradesh, Madhya Pradesh, Maharashtra and the southern states. Guar is a rain-fed kharif crop, sown with the monsoon from June and July and harvested from October into November, so the arrival season and the monsoon together set the year’s supply picture.
