Indian Honey: NMR Authenticity Testing, Grades and Compliance
India is the world’s third-largest honey exporter and its honey trades at the low end of the global price range. This guide explains why that discount exists, what a buyer must test for to price Indian honey accurately, and the documentation that separates a credible supplier from the market average.

The discount, and where it comes from

India exported approximately 100,773 metric tons of honey in FY 2024-25, valued at around US$206.47 million. That works out to an average realisation in the region of US$1,858 per tonne — materially below what comparable origins achieve.

The reason is not floral quality or production capacity. It is that the international market discounts Indian origin for authenticity risk. Adulteration of honey with sugar syrups has been documented in Indian supply chains, and the effect on price has been direct: industry figures have described export realisations falling from around US$2,900 per tonne to roughly US$1,500 as a consequence. Testing conducted in India found that a large majority of leading domestic brands passed the standard national tests while failing NMR screening.

The honest position for a buyer: origin reputation is a real input into the price you are offered, and no supplier can argue you out of it. What a supplier can do is separate itself from the origin average with evidence. Everything below is about what that evidence consists of. If an Indian honey supplier cannot produce it, the discount is warranted and you should treat their offer accordingly.

NMR: the test that decides the purchase

This is the section that matters most, and it rests on a technical distinction many buyers have not been told.

What conventional testing catches, and what it misses

Standard honey authenticity testing measures C4 sugars, using stable carbon isotope ratio analysis. It detects adulteration with cane sugar and corn syrup, which are C4 plants. It does not reliably detect syrups made from C3 plants — rice, beet, wheat. Those syrups carry an isotopic signature close to honey’s own, and material adulterated with them can pass a C4 sugar test cleanly.

That gap is precisely where honey adulteration has moved. A certificate showing compliance on C4 sugar alone tells a buyer considerably less than it appears to.

What NMR does differently

Nuclear Magnetic Resonance profiling does not test for a specific adulterant. It captures the full spectral fingerprint of the sample and compares it against a reference database built from thousands of authentic honeys. Deviations show up whether or not the analyst knew what to look for — which is why it catches C3 syrups, undeclared blending, resin treatment and botanical or geographic misdeclaration that targeted tests do not.

The Indian government has pressed the Export Inspection Council to make NMR testing mandatory for exported honey, and EIC operates laboratory capacity for it.

Make the NMR report a condition of purchase, not an optional extra, and specify three things: that it is performed on the shipped lot rather than a representative sample from earlier production; which laboratory performs it, since the value of NMR depends on the reference database behind it; and that the full report is provided rather than a pass statement. A supplier who offers NMR on the shipped lot without being asked is telling you something useful about how they operate.

Supporting authenticity tests

  • C4 sugar by stable carbon isotope ratio analysis — still worth running, but not sufficient alone
  • Trace marker for rice syrup, where rice syrup is the specific concern
  • Foreign oligosaccharides screening
  • Pollen analysis for botanical and geographic origin verification where you are buying a monofloral

Residues: the other rejection cause

Antibiotic residues are the second reason honey consignments fail, and the European Union in particular operates on a basis where several relevant substances have no permitted level in honey — meaning any detection at the laboratory’s limit renders the consignment non-compliant.

Specify at minimum:

  • Chloramphenicol
  • Nitrofuran metabolites — AOZ, AMOZ, AHD, SEM
  • Streptomycin and other aminoglycosides
  • Sulphonamides
  • Tetracyclines
  • Pesticide residues against your destination’s list
  • Heavy metals where your specification requires

For consignments to the European Union, the Export Inspection Council is India’s competent authority for honey, and shipments move under India’s approved residue monitoring plan with EIC or EIA health certification. Confirm which party arranges that certification and that the processing establishment is approved and listed.

Name the substances, the analytical methods and the required limits of detection in the contract, and require results on the shipped lot. A declaration that honey is “antibiotic free” without method and detection limit stated is not a testable claim — and in a market where zero tolerance applies, the detection limit is the specification.

HMF and diastase are worth a second look because they behave as a pair. Both move in the same direction when honey is overheated or held too long, so a high HMF with low diastase is a consistent picture of thermally abused or aged material, while an odd combination warrants a question.

Colour is specified on the Pfund scale in millimetres, running from water white through extra white, white, extra light amber, light amber and amber to dark amber. Specify a Pfund range rather than a colour word, since the words are used loosely and the scale is not.

If you are buying a monofloral, the varietal claim needs support. Pollen analysis is the standard method, and NMR profiling can also indicate botanical origin. A monofloral premium paid on a supplier’s word rather than on analysis is a premium paid for a label.

Trade position: MEP, tariffs and duties

Three things affect what you can be quoted and what you will pay on arrival.

Minimum export price

The Directorate General of Foreign Trade has maintained a minimum export price on honey of US$1,400 per metric ton, extended until December 2026. No Indian exporter can lawfully quote below it. An offer materially below the MEP is a reason to question the offer.

United States

An antidumping duty order on raw honey from India remains in force, with the administrative review covering June 2023 to May 2024 finalised in June 2026. Antidumping rates are exporter-specific and change with each review, so a US importer should confirm the applicable rate for the specific exporter rather than assuming a headline figure. Separately, the US tariff applied to Indian honey was reduced from 50 percent to 18 percent with effect from 6 February 2026. Verify both positions with your customs broker before contracting.

European Union

Confirm that the exporter’s processing establishment is approved for export to the EU and that consignments will carry EIC or EIA health certification under India’s residue monitoring plan. Note also that EU rules on honey labelling have been revised to require country-of-origin declaration for blends; confirm the application date and the national implementation for your market, as this affects how you must label a blended finished product.

Honey is stable but not indifferent to handling. Heat in transit raises HMF and reduces diastase, which means a consignment can leave origin compliant and arrive marginal. For long or hot routes, agree whether quality is determined at load port or on arrival and who carries the risk in between — the same clause that matters for castor oil and for the same reason.

How to qualify an Indian honey supplier

  1. Ask for an NMR report on a recent shipped lot, naming the laboratory, before discussing price. The response to this single request will tell you most of what you need to know.
  2. Verify APEDA registration and FSSAI licence, and for EU trade the EIC establishment approval.
  3. Establish whether the counterparty processes or only trades, and where the processing unit sits.
  4. Ask how beekeeper-level traceability works — how a drum is linked back to the apiaries it came from.
  5. Require the antibiotic panel with methods and limits of detection stated, on the shipped lot.
  6. For monofloral claims, require pollen analysis rather than accepting the varietal description.
  7. Start with a trial consignment and run independent NMR and residue testing before a term contract.

Frequently asked questions

Why is NMR testing essential?
Conventional C4 sugar testing detects cane and corn syrup but not C3 syrups from rice, beet or wheat. NMR compares the full spectral fingerprint against a reference database and catches adulteration that targeted tests miss. Treat it as a condition of purchase.
