India supplies the overwhelming majority of the world’s guar. What a food, pharmaceutical or oilfield buyer should establish before contracting — grade and viscosity, mesh and hydration rate, the microbiological clauses that decide usability, and how the cargo should move.

Why buyers keep returning to Indian guar gum

Guar gum is a galactomannan extracted from the endosperm of the guar bean, and it does something no synthetic thickener does as cheaply: it builds very high viscosity in cold water at very low dosage. That single property put it into ice cream, sauces, bakery, pet food, textile printing, paper, explosives and hydraulic fracturing.

India grows roughly eighty per cent of the world crop, concentrated in Rajasthan, Haryana and Gujarat, with a processing industry around Jodhpur that has been splitting and milling guar for half a century. Attempts to establish the crop elsewhere have not changed that balance.

For a buyer this means origin risk is concentrated. It also means the depth of the Indian market is real: grades, viscosities and mesh sizes that a specialty supplier elsewhere would treat as a special run are routine here.

Guar gum export from India is free of restriction as of September 2026. The constraint is crop size and processing capacity, not policy.

What India offers

Food-grade guar gum powder

The largest export category. Milled to 200 mesh, supplied against a viscosity band and microbiological limits, and used as a thickener and stabiliser in dairy, sauces, bakery and beverages. It carries E 412 as its European additive number.

Pharmaceutical-grade guar gum

Tighter ash, acid insoluble residue and microbiology, finer mesh, and full compliance documentation against pharmacopoeia monographs. Volumes are smaller and lead times longer because the material is produced in dedicated runs.

Oilfield and industrial grades

Coarser mesh, wider moisture tolerance and no microbiological specification, sold on viscosity and hydration rate for fracturing fluids, drilling muds and textile printing pastes. This is the grade whose demand swings with energy activity rather than food consumption.

Guar splits and derivatives

Splits are the intermediate product sold to millers who prefer to grind to their own specification. Derivatives such as hydroxypropyl guar and cationic guar are produced in India as well, and are contracted on substitution level rather than on viscosity alone.

Reference specifications

The table above is the working baseline we contract against. Three numbers carry most of the commercial weight, and only one of them is viscosity.

Protein content indicates how completely the germ and hull were removed during splitting. High residual protein depresses viscosity yield and can cause off-flavour in dairy applications. Acid insoluble residue is the honest measure of how clean the milling was.

Moisture matters because guar gum is hygroscopic. A powder shipped at the upper limit will gain more in a humid transit and can cake, which is the most common arrival complaint on this product.

Specify the viscosity measurement conditions in full: concentration, hydration time, temperature and instrument type. A number quoted at one hour is not the same product as a number quoted at two hours.

Hydration rate, mesh and why they are contracted separately

Two lots can share a viscosity figure and behave differently in the plant. The difference is hydration rate, which is governed by particle size distribution.

Finer material hydrates faster because there is more surface area per gram. In an instant dessert or a fracturing fluid pumped downhole, that speed is the specification. In a slow-cooked sauce it is irrelevant, and paying for 300 mesh is waste.

Fast-hydrating grades are produced by controlling the mill rather than by additives, and a supplier who cannot describe how they achieve it is probably blending. Ask for a hydration curve, not a claim.

Food safety, microbiology and regulatory position

Food-grade material is manufactured under FSSAI licence, and export lots are normally produced in ISO 22000 or HACCP certified facilities. Specify total plate count, yeast and mould, and absence of E. coli and Salmonella, and require a certificate of analysis from an accredited laboratory for each lot.

In the European Union it is an authorised additive under E 412, with purity criteria set out in the food additive specifications regulation. Buyers selling into the EU should also confirm that the supplier tests for pentachlorophenol, which is the residue that historically triggered border rejections on this commodity.

Pharmaceutical buyers should confirm which monograph applies to their market and obtain the corresponding certificate. Compliance is not interchangeable between pharmacopoeias.

Documentation for a guar gum shipment

  • Commercial invoice and packing list with batch numbers matching the bags
  • Bill of lading or air waybill
  • Certificate of origin, preferential where a trade agreement applies
  • Certificate of analysis covering viscosity, mesh, moisture, protein, ash and pH
  • Microbiological certificate for food and pharmaceutical grades
  • Pesticide residue report, including pentachlorophenol for EU destinations
  • Health certificate or free sale certificate, where the destination requires one
  • Non-GMO and allergen-free declarations where the buyer’s category requires them

Agricultural and processed exports from India are registered through APEDA, and food-grade production is licensed by the Food Safety and Standards Authority of India. Ask for both numbers and verify them rather than accepting a scanned certificate.

Packing, loading and shipment mode

Standard packing is 25 kg multi-wall kraft paper bags with an inner polyethylene liner, palletised and shrink wrapped. One-tonne bulk bags are used for oilfield volumes where the receiving site can handle them.

The powder is light, so containers fill by volume long before they reach weight limits. Expect roughly 14 to 16 MT in a 20 ft container and 26 to 28 MT in a 40 ft container when palletised.

Because the powder is hygroscopic, specify container desiccants on long or humid routings and ask for the liner specification in writing. Caked material is technically within specification and commercially useless.

Ports, routes and transit

Most of this material moves through Mundra and Kandla, both close to the Jodhpur processing belt. Nhava Sheva serves some pharmaceutical and specialty volumes. Indicative transit runs eight to twelve days to Jebel Ali, twenty-two to thirty days to North European base ports, and twenty-eight to thirty-five days to the US Gulf.

Airfreight is used for pharmaceutical trial quantities and for urgent oilfield top-ups, and is priced per kilogram, so it only makes sense on small high-value lots.

Season, crop cycle and price formation

Guar is sown with the monsoon in July and harvested from October, with peak mandi arrivals in November. The crop is largely rainfed, so a weak monsoon in western Rajasthan reduces supply directly and visibly.

Price is built from the mandi seed price, the splitting and milling yield, packing and inland freight, and the processor’s margin. Because oilfield demand is uncorrelated with the Indian monsoon, the two cycles can reinforce each other, which is why guar gum has a history of sharp moves.

Buyers with annual requirements usually contract part of the volume against new crop in the fourth quarter and leave the balance open, rather than fixing a full year in a single trade.

How to qualify an Indian guar gum supplier

  1. Ask for the IEC, APEDA registration and FSSAI licence numbers, and verify them independently.
  2. Ask whether the supplier owns the splitting and milling plant or buys powder on the open market.
  3. Ask for a pre-shipment sample from the actual lot with a full certificate of analysis, not a typical analysis sheet.
  4. Ask how viscosity is measured in their laboratory and request the method in writing.
  5. Ask for two references in your own market who have taken material in the last twelve months.

Common mistakes importers make

The first is comparing offers on viscosity alone without matching the measurement conditions. A number without a method is not a specification.

The second is buying industrial grade for a food line because the viscosity looks the same. Microbiology and residual protein are what separate the grades, and neither is visible.

The third is ignoring mesh. If the plant needs fast hydration, coarse material will underperform at the correct viscosity and the fault will be blamed on the wrong thing.

The fourth is contracting a full year at the top of a crop scare. Guar gum prices mean-revert with the monsoon more reliably than most agricultural inputs.

Frequently asked questions

What viscosity should I specify for guar gum?
It depends on the application. Food systems typically work at 4,500 to 5,500 centipoise measured at 2% concentration after two hours at 25 degrees Celsius. Pharmaceutical grades run higher and oilfield grades lower. Always state concentration, hydration time, temperature and instrument alongside the number.
What is the difference between 100 mesh and 200 mesh?
Mesh describes particle fineness and therefore hydration rate. 200 mesh disperses and builds viscosity faster, which matters in instant food systems and fracturing fluids. 100 mesh is coarser, cheaper and slower, and is used where hydration time is not critical.
Is Indian guar gum food safe?
Food-grade material is produced under FSSAI licence in facilities that are usually ISO 22000 or HACCP certified, and is supplied against microbiological limits including absence of E. coli and Salmonella. Ask for the certificate of analysis and the facility certification before contracting.
How much guar gum fits in a container?
Roughly 14 to 16 MT in a 20 ft container in 25 kg paper bags on pallets, because the powder is volume limited rather than weight limited. A 40 ft container carries about 26 to 28 MT.

  • Food, pharmaceutical and oilfield grades differ in microbiology and residual protein, not only in price. Buying oilfield grade for a food line is a false economy.
